Zöliakie und Glutenintoleranz sind Erkrankungen, die auf einer Überempfindlichkeit gegen Gluten beruhen, das in vielen Getreidesorten als Klebereiweiß enthalten ist. Aufgrund neuerer Studien zählen diese zu den am häufigsten vorkommenden ernährungsbedingten Erkrankungen. Da die Zöliakie bisher nicht ursächlich behandelt werden kann, ist eine lebenslange glutenfreie Ernährung nach augenblicklichem Erkenntnisstand die einzige Möglichkeit, der Krankheit zu begegnen. Wie verschiedene der heute für die betroffene Konsumentengruppe angebotenen Lebensmittel zeigen, ist deren Herstellung nicht trivial. Aus diesem Grunde wird diese Thematik nunmehr bereits zum dritten Mal in einem speziellen Forum aufgegriffen, in welchem vor allem technologische Aspekte der Herstellung von Lebensmitteln für Zöliakie- und Glutenintoleranz-Betroffene behandelt werden. Im Rahmen der Veranstaltung findet die Verleihung des DLG-Innovations Award „Junge Ideen“ statt.

The Food Law Winter School is mainly targeted to students in Law, but also open for food science students to enhance interdisciplinary activities and discussions. The target group is students on Bachelor/undergraduate level, but some places are reserved for MSc and PhD students.
Food Law is a small discipline in the field of Law, and is rarely taught at Law or Food faculties in Europe. The Winter School thus is an excellent opportunity for Law and Food Science students to get to know a bit of this field.
The Global Food Winter School is targeted at Food Science students at BSc level, who are interested in a position in the global food market and have an international mindset. The programme includes a sustainability workshop by Unilever and a visit to the largest chocolate factory in the world.

The well-categorized database shows both innovative and modern, but also many traditional recipes. In contrary to classic recipes, which usually consist of a list of ingredients and preparation instructions, these recipes additionally display nutritional information and a specific "Food Print". This Food Print ranges from one to five and serves as an indicator for the degree of sustainability and the environmental impact of a certain recipe.

In the first year of the TRAFOON project, European small and medium enterprises (SMEs) that are producing traditional foods and food raw materials were asked for their current needs and their opinion of future challenges.
SMEs were asked for needed innovations of technical improvements in food production and processing, packaging, labelling, certification, marketing and related topics. For the qualitative analysis of this inventory of needs, multi-stakeholder workshops will be performed which are focusing on the named needs of SMEs in the five food categories. Following multi-stakeholder workshops will be performed:
Based on the inventory of needs, the workshops identify sets of innovations that are needed by traditional food SMEs within the different food categories and design training workshops for SMEs which will be performed in the year 2 and 3 of the TRAFOON project. Further, the multi-stakeholder workshops identify gaps in innovations which will be included into the strategic research and innovation agenda.

The general aims of the ISEKI_Food conference series are to contribute to the creation of an "open" international forum for researchers, education scientists, technologists and industry representatives as well as food consumers, to promote constructive dialogue and collaboration on topics relevant to Food Science and Technology, Industry and Education and to present and disseminate the results of the activities developed by the ISEKI_Food network projects.
This conference will be focused on Food Science and Technology for a Bioeconomy 2020. Among a wide number of conference topics, the re-thinking of education in terms of strategies and methods for higher education and continual professional development, the most recent research innovations and emergent requirements, and developments and needs for an industry sustainable food supply, will be on top of the agenda.
